Preparation of Fish

    Season the Halibut

    Pat the halibut fillets dry with a paper towel. Season both sides with salt and black pepper.

    Heat Olive Oil

    In a large skillet, heat 2 tablespoons of olive oil over medium-high heat until shimmering.

    Cook the Halibut

    Place the halibut fillets in the skillet and cook for about 4-5 minutes per side, or until golden brown and cooked through. The fish should flake easily with a fork.

    Serve

    Remove the fillets from the skillet and serve with lemon wedges on the side.

Preparation of Artichoke & Caper Sauce

    Combine Ingredients

    In a food processor, combine the canned artichoke hearts, capers, chopped parsley, minced garlic, lemon juice, 3 tablespoons of olive oil, salt, and black pepper.

    Blend the Sauce

    Blend the mixture until smooth. You can adjust the consistency by adding a little water if needed.

    Taste and Adjust

    Taste the sauce and adjust the seasoning if necessary by adding more salt or pepper.

    Serve with Halibut

    Drizzle the artichoke and caper sauce over the cooked halibut fillets before serving.
