Ravioli Preparation

Make the Dough
In a large bowl, combine the flour and eggs. Mix until a dough forms. Knead on a floured surface for about 5 minutes until smooth. Wrap in plastic and let rest for 30 minutes.

Prepare the Filling
In a mixing bowl, combine ground pork, minced garlic, grated ginger, fish sauce, chopped green onions, and cilantro. Mix well to combine.

Roll Out the Dough
Divide the rested dough into quarters. Roll out each quarter into a thin sheet using a pasta machine or rolling pin.

Form the Ravioli
Place small mounds of filling (about 1 tsp) on one sheet of dough, leaving space in between. Moisten the edges with water, then fold the dough over to cover the filling. Press to seal and cut into squares or circles.

Cook the Ravioli
Bring a large pot of salted water to boil. Drop the ravioli in batches and cook for about 3-4 minutes until they float. Remove with a slotted spoon and set aside.
