    Prepare the Pasta

    Bring a large pot of salted water to a boil. Add the spaghetti or fettuccine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

    Cook the Guanciale

    In a large skillet over medium heat, add the guanciale and cook until crispy, about 5-7 minutes. Remove from heat and set aside, leaving the rendered fat in the pan.

    Cook the Shrimp

    In the same skillet, add the olive oil if needed and return to medium heat. Add the shrimp and cook until pink and opaque, about 2-3 minutes per side. Add the crispy guanciale back to the skillet.

    Combine Egg Mixture

    In a mixing bowl, whisk together the egg yolks, grated Grana Padano, and freshly ground black pepper. Mix until well combined.

    Combine Everything

    Add the drained pasta to the skillet with the shrimp and guanciale. Toss to combine, then remove from heat. Quickly pour the egg mixture over the pasta, tossing continuously to create a creamy sauce. If needed, add reserved pasta water to reach desired consistency.

    Serve

    Serve immediately with additional grated Grana Padano and black pepper on top.
