Roasting the Tomatoes
Preheat the oven to 200°C (400°F). Halve the cherry tomatoes and place them on a baking sheet. Drizzle with 1 tablespoon of olive oil, sprinkle with salt and black pepper. Roast in the oven for 15-20 minutes until soft and slightly caramelized.

Cooking the Gnocchi
Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions until they float to the surface (usually about 2-3 minutes). Drain and set aside.

Sautéing the Vegetables
In a large skillet, heat the remaining 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add the mixed seasonal vegetables, dried Italian herbs, salt, and pepper. Cook until the vegetables are tender, about 5-7 minutes.

Combining Everything
Add the cooked gnocchi to the skillet with the sautéed vegetables. Gently toss to combine and heat through. Top with roasted tomatoes and sprinkle with fresh parsley before serving.
