Prepare the Pork
Season the pork osso bucco pieces with salt and pepper on both sides.

Add Spices and Broth
Stir in oregano, cumin, and chili powder. Pour in chicken broth, scraping the bottom of the pot to deglaze. Return the pork to the pot.

Simmer
Bring to a boil, then reduce heat to low. Cover and let simmer for 2-3 hours, or until the meat is tender and falling off the bone.

Prepare the Apple Slaw
While the pork is cooking, prepare the apple slaw by thinly slicing apples and tossing them with a bit of lemon juice, salt, and pepper. Set aside.

Prepare Garlic Panko
In a separate pan, toast panko breadcrumbs with minced garlic in a bit of olive oil until golden brown.

Serve
Plate the pork osso bucco on top of the pommes purée, topped with apple slaw and garnished with toasted garlic panko. Serve with sliced Palisade peaches on the side.
