Method

Preparing the Chuck Roast

    Season the Roast

    Rub the Black Angus Chuck Roast with olive oil, salt, and black pepper. Let it sit at room temperature for 30 minutes.

    Chargrill the Roast

    Preheat your grill to medium-high heat. Grill the roast for about 20-25 minutes per side, or until it reaches an internal temperature of 135°F for medium. Let it rest for 10 minutes before slicing.

Roasting Potatoes

    Prepare the Potatoes

    Preheat your oven to 400°F (200°C). Wash and halve the baby potatoes.

    Season and Roast

    Toss the potatoes with olive oil, garlic powder, salt, and fresh rosemary. Spread evenly on a baking sheet and roast for 25-30 minutes, or until golden and tender, flipping halfway through.

Cooking Mushrooms

    Sauté the Mushrooms

    In a skillet, melt butter over medium heat. Add the button mushrooms and sauté for 5-7 minutes until they are browned and tender.

    Season the Mushrooms

    Add salt, black pepper, and fresh thyme to the mushrooms. Cook for an additional minute and remove from heat.

Making Horseradish Sauce

    Prepare the Sauce

    Grate the fresh horseradish root. In a bowl, combine grated horseradish, sour cream, lemon juice, and salt. Mix well and adjust seasoning to taste.

Preparing the Salad

    Mix the Salad

    In a large bowl, combine wort, parsley, and red onion. Drizzle with olive oil and balsamic vinegar, then season with salt and black pepper. Toss gently to combine.
