Method
Preparing the Chicken

Marinate the Chicken
In a bowl, mix together olive oil, minced garlic, fresh thyme, fresh rosemary, salt, and black pepper. Add the chicken breasts and coat well. Cover and let marinate for at least 30 minutes in the refrigerator.

Cook the Chicken
Preheat a grill or skillet over medium-high heat. Cook the marinated chicken breasts for about 6-7 minutes on each side or until they reach an internal temperature of 165°F (75°C). Remove from heat and let rest before slicing.
Preparing the Seasonal Vegetables

Chop the Vegetables
While the chicken is marinating, chop the zucchini, bell peppers, carrots, and green beans into bite-sized pieces.

Sauté the Vegetables
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped vegetables and sauté for about 8-10 minutes until they are tender but still crisp. Season with salt and pepper to taste.
Making the Herbed Jus

Prepare the Jus
In a saucepan, combine chicken stock and white wine. Bring to a simmer over medium heat. Allow to reduce by half, about 10-15 minutes.

Finish the Jus
Remove from heat and stir in 2 tablespoons of butter until melted and combined. Season with salt and pepper to taste.
Serving

Plate the Dish
Slice the rested chicken breasts and serve on a plate with sautéed seasonal vegetables on the side. Drizzle the herbed jus over the chicken and vegetables.
