Preparation

    Prepare the Beef

    Finely chop the beef tenderloin using a sharp knife. The pieces should be small enough to be easily combined with the other ingredients but not so small that they turn into a paste.

    Chop the Chives

    Wash and finely chop the chives. Set aside for later use.

    Prepare the Daikon

    Peel the daikon radish and cut it into thin strips or small cubes. This will be used as a garnish.

Mixing Ingredients

    Combine Ingredients

    In a mixing bowl, combine the finely chopped beef, egg yolk, chopped chives, Kewpie mayonnaise, lime juice, and chili flakes. Mix gently until all ingredients are well incorporated.

Serving

    Plate the Tartare

    Spoon the steak tartare mixture onto a chilled plate. Use a ring mold for a neat presentation if desired.

    Garnish with Daikon

    Arrange the prepared daikon radish around the steak tartare for garnish. Optionally, add a sprinkle of extra chili flakes on top.

    Serve Immediately

    Serve the steak tartare immediately with additional lime wedges on the side for extra freshness.
