Preparing the Fries

Cut the Potatoes
Wash and peel the russet potatoes. Cut them into long strips approximately 1/4 inch thick.

Dry the Potatoes
After soaking, drain and thoroughly dry the potatoes using a clean kitchen towel.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes (First Fry)
Carefully add the dried potato strips in batches to the hot oil and fry for about 4-5 minutes until they are soft but not browned. Remove and drain on paper towels.

Heat Oil Again
Increase the oil temperature to 375°F (190°C).

Fry the Potatoes (Second Fry)
Return the partially fried potatoes to the hot oil in batches and fry for an additional 2-3 minutes until golden brown and crispy. Drain again on paper towels.

Season the Fries
While the fries are still hot, sprinkle with salt and paprika to taste.
Cooking the Steak

Prepare the Steak
Take the ribeye steaks out of the refrigerator and let them rest at room temperature for about 30 minutes.

Flip and Finish Cooking
Flip the steaks and cook for an additional 3-4 minutes for medium-rare, or adjust the time to your liking.

Rest the Steak
Remove the steaks from the heat and let them rest for 5 minutes before slicing.
