    Prepare the Ingredients

    Begin by finely chopping the garlic and ginger. Dice the carrot into small pieces and slice the scallions, separating the white and green parts.

    Prepare the Mackerel

    Remove the skin from the smoked mackerel and flake the flesh into bite-sized pieces, discarding any bones.

Cooking

    Scramble the Eggs

    In a large skillet or wok, heat a tablespoon of oil over medium heat. Beat the eggs in a bowl and pour into the skillet, scrambling them until fully cooked. Remove from the skillet and set aside.

    Stir-Fry the Vegetables

    In the same skillet, add another tablespoon of oil and increase to high heat. Add the chopped garlic, ginger, and the white parts of the scallions. Stir-fry for about 30 seconds until fragrant.

    Add Carrots and Peas

    Add the diced carrot and frozen peas to the skillet. Continue to stir-fry for another 2-3 minutes until the vegetables are tender.

    Combine Rice and Mackerel

    Add the cooked jasmine rice and flaked smoked mackerel to the skillet. Use a spatula to break apart any clumps of rice and mix everything together.

    Season the Fried Rice

    Pour in the soy sauce and sesame oil, then sprinkle with chili flakes, salt, and black pepper. Stir well to combine all ingredients and heat through.

    Finish with Eggs and Scallions

    Return the scrambled eggs to the skillet, along with the green parts of the scallions. Gently fold everything together until well mixed.

    Serve the smoked mackerel fried rice hot, topped with crispy fried fish skin and fresh cilantro for garnish.
