Shrimp Chips

Prepare the Shrimp Mixture

In a food processor, combine the shrimp, tapioca starch, water, and salt. Blend until you achieve a smooth paste.

Form the Chips

Transfer the shrimp mixture into a piping bag. Pipe out small rounds or shapes onto a baking sheet lined with parchment paper. Make sure to leave some space in between each piece.

Dry the Chips

Leave the piped shrimp mixture to dry at room temperature for about 2-3 hours or until they are firm to the touch.

Heat the Oil

In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F).

Fry the Chips

Carefully drop the dried shrimp chips into the hot oil, frying them in batches to avoid overcrowding. Fry for about 2-3 minutes or until they puff up and turn golden brown.

Drain and Cool

Using a slotted spoon, remove the chips from the oil and place them on paper towels to drain excess oil. Let cool completely.

Make the Lime Leaf Salt

In a small bowl, combine the dried and crushed lime leaves with the sea salt. Mix well to ensure even distribution of flavors.

Serve

Sprinkle the lime leaf salt over the cooled shrimp chips just before serving for an added burst of flavor.
