Prepare the Apples

Wash the apples thoroughly under cold water. Cut them into quarters, removing the seeds and stems, but leaving the skins on for added flavor.

Combine Ingredients

In a large pot, combine the quartered apples and water. Bring to a boil over medium-high heat.

Simmer the Mixture

Once boiling, reduce the heat to low and add the granulated sugar, cinnamon sticks, whole cloves, nutmeg, lemon juice, and vanilla extract. Stir well to combine.

Cover the pot and let the mixture simmer for about 1 hour, stirring occasionally. The apples should become soft and the mixture fragrant.

After an hour, remove the pot from heat. Use a fine mesh strainer or cheesecloth to strain the mixture into a large bowl or pitcher, discarding the solids.

Allow the cider to cool to room temperature, then transfer it to a clean bottle or jar. Seal tightly and refrigerate. Serve chilled or warm.
