Method

Preparation of Salmon

  1. 1

    Marinate the Salmon

In a medium bowl, combine olive oil, lemon juice, minced garlic, salt, and black pepper. Whisk together until well blended. Place the salmon fillets in the mixture, ensuring they are coated well. Cover and let marinate in the refrigerator for at least 30 minutes.

  2. 2

    Preheat the Grill

Preheat the grill to medium-high heat, about 400°F (200°C).

Cooking the Salmon

  1. 3

    Grill the Salmon

Remove the salmon from the marinade and place it skin-side down on the preheated grill. Grill for about 6-8 minutes per side, depending on thickness, until the salmon flakes easily with a fork.

Preparation and Cooking of Vegetables

  1. 4

    Prepare the Vegetables

While the salmon is marinating, wash and slice the zucchini and bell peppers into strips. Trim the ends of the asparagus.

  2. 5

    Toss and Grill the Vegetables

In a large bowl, toss the prepared vegetables with olive oil, salt, and black pepper. Place them on the grill alongside the salmon, grilling for about 5-7 minutes or until tender and slightly charred, turning occasionally.

Serving

  1. 6

    Plate the Dish

Once the salmon and vegetables are cooked, remove them from the grill. Serve the grilled salmon alongside the seasonal vegetables on a plate. Garnish with lemon wedges if desired.
