Method

Crust Preparation

  1. 1

    Prepare the Crust

In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Stir until the mixture is well combined and resembles wet sand.

  2. 2

    Form the Crust

Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Ensure the crust is compact.

  3. 3

    Prebake the Crust

Preheat the oven to 350°F (175°C). Bake the crust for 10 minutes until slightly golden. Remove from the oven and let it cool.

Filling Preparation

  1. 4

    Beat Cream Cheese

In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until creamy and smooth, about 2-3 minutes.

  2. 5

    Add Sugar and Sour Cream

Gradually add the granulated sugar and sour cream to the cream cheese, mixing until well combined. Scrape down the sides of the bowl as needed.

  3. 6

    Mix in Vanilla and Eggs

Add the vanilla extract and eggs, one at a time, mixing well after each addition. Ensure the mixture is smooth.

  4. 7

    Add Flour

Sift the all-purpose flour over the mixture and gently fold it in until just combined.

  5. 8

    Pour Filling into Crust

Pour the cheesecake filling over the cooled crust in the springform pan, spreading it evenly.

  6. 9

    Bake the Cheesecake

Bake in the preheated oven at 350°F (175°C) for 55-60 minutes, or until the center is set but slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour.

  7. 10

    Chill the Cheesecake

Refrigerate the cheesecake for at least 4 hours or overnight until fully set.

Topping Preparation

  1. 11

    Prepare Topping

If desired, wash and dry the fresh berries. In a small bowl, toss them with powdered sugar to coat lightly.

  2. 12

    Garnish the Cheesecake

Before serving, top the cheesecake with the sugared berries and garnish with mint leaves.
