    Whisk custard

    In a wide shallow bowl or baking dish, whisk together eggs, whole milk, heavy cream, granulated sugar, vanilla, ground cinnamon, lemon zest, and salt until homogenous and slightly frothy. Taste; it should be mildly sweet and aromatic.

    Pour mixture into a shallow dish large enough to lay bread flat so slices can soak evenly.

Seasonal Fruit Compote

    Prepare fruit

    If using firmer fruits (apples, pears, peaches), core and dice into roughly 1/2-inch pieces. If using berries, leave whole or halve larger berries. Measure about 3 cups total.

    Cook compote

    In a medium skillet over medium heat, melt 1 tablespoon unsalted butter. Add the diced seasonal fruit and toss to coat. Sprinkle brown sugar (or drizzle maple syrup), add lemon juice and 1/2 teaspoon cinnamon. Cook, stirring occasionally, until fruit softens and releases juices (5–8 minutes for berries/soft fruit; 8–12 minutes for firmer fruit).

    Adjust thickness

    If fruit juices are thin and you want a thicker compote, mix 1/2 teaspoon cornstarch with 2 tablespoons cold water, then stir into the simmering fruit and cook 1–2 minutes until slightly thickened. Remove from heat and keep warm. Taste and adjust sweetness or acidity if needed.

Bread & Cooking

    Soak bread

    Arrange the bread slices in a single layer and pour enough custard over them to soak (or lay slices into the shallow dish so both sides contact custard). Let them soak 20–30 seconds per side for day-old thick slices (longer, up to 1 minute per side, for very stale bread). Do not oversoak to mushiness; the slices should be saturated but still hold shape.

    Heat pan

    Heat a large nonstick or cast-iron skillet over medium heat. Add 1 tablespoon neutral oil (optional) and 1 tablespoon butter. When butter foams and begins to brown slightly, reduce heat to medium-low to prevent burning.

    Cook French toast

    Working in batches, transfer soaked slices to the skillet (do not overcrowd). Cook 3–4 minutes per side until deep golden brown and cooked through, pressing gently with a spatula for even contact. Add more butter to the pan between batches as needed and wipe the pan if residual burnt bits accumulate.

    Keep cooked slices warm on a wire rack in a low oven (200°F / 90°C) while finishing remaining bread to preserve crispness.

Assembly & Serving

    Plate

    Stack 2–3 slices of French toast per serving on plates. Spoon warm seasonal fruit compote over the top, allowing some juices to cascade down the sides.

    Drizzle with maple syrup if desired, dust with a little confectioners' sugar, scatter toasted nuts and a few fresh herb leaves for brightness.
