Proteins — preparation & roasting

Turkey prep and roast

Preheat oven to 325°F (165°C). Remove giblets and pat the turkey dry. Gently loosen skin and spread 1/2 cup softened butter mixed with 2 tbs chopped rosemary, 2 tbs chopped thyme, 1 tbs minced garlic, 1 tbs salt and 1 tsp black pepper under the skin. Rub outside with 2 tbs olive oil, 1 tbs smoked paprika, 2 tbs kosher salt and 1 tbs ground black pepper. Truss legs. Place breast-side up on a rack in a roasting pan. Roast until an instant-read thermometer reads 165°F (74°C) in the thickest part of the thigh (allow ~13–15 minutes per lb for a 10–12 lb turkey). Tent with foil if browning too quickly. Rest for 30–45 minutes before carving; reserve pan juices for gravy.

Prime rib prep and roast

Bring prime rib to room temperature (1–2 hours). Preheat oven to 450°F (230°C). Pat roast dry and rub with 2 tbs olive oil. Combine 2 tbs kosher salt, 1 tbs black pepper, 1 tbs minced garlic, 1 tbs chopped rosemary and 1 tbs chopped thyme; press onto roast. Place bone-side down on a rack in a roasting pan. Roast at 450°F for 20 minutes to develop crust, then reduce oven to 325°F (165°C) and continue roasting until internal temperature reaches 125°F (52°C) for medium-rare (about 12–15 minutes per lb from the reduced temperature). Remove and tent; let rest 20–30 minutes (carryover will bring it to ~130–135°F). Collect juices for au jus.

Ham warming & glaze

Preheat oven to 325°F (165°C). Place spiral ham cut-side down in a shallow roasting pan. Make glaze by combining 1/2 cup brown sugar, 1/4 cup softened butter, 2 tbs Dijon or whole-grain mustard and 1 tbs smoked paprika. Brush glaze over ham and cover loosely with foil. Heat for 10–12 minutes per lb until warmed through (internal temp ~140°F / 60°C). During the last 20–30 minutes, uncover and baste with remaining glaze to caramelize. Rest 10 minutes before carving.

Sauces & condiments — prepare & hold

Prepare or reheat turkey gravy and au jus. Keep gravy at a gentle simmer, then transfer to chafing dishes to hold at 140°F (60°C). Warm au jus and keep in a covered server. Place whole-grain mustard, horseradish sauce and cranberry sauce in small bowls with spoons at the station. Label each condiment.

Set three large heatproof cutting boards on the carving station, each with its own carving knife and fork. Arrange the roasted proteins on the boards: turkey on one, prime rib on another, ham on the third. Place chafing dishes/warmers with gravy and au jus behind the proteins. Arrange serving platters and rolls/bread nearby. Garnish platters with roasted root vegetables, herb sprigs and microgreens. Place signage identifying each protein and the suggested slice (e.g., turkey: white/dark; prime rib: medium-rare; ham: glazed slices).

Position thermometers to spot-check temperatures throughout service. Keep carving knives sharp and an electric knife available for quick slices. Provide tongs and heat-resistant gloves for staff.

Carving technique & service

Turkey: For white meat, carve thin slices from the breast by cutting parallel to the breastbone and angling the knife slightly. For dark meat, remove the leg and thigh by cutting through the joint, then slice across the grain into serving portions. Serve slices on platter and spoon pan juices or gravy over as desired.

Prime rib: Remove twine and, if bone-in, cut along the bone to separate. Slice against the grain into 1/4–1/2 inch thick slices for medium-rare. Keep slices slightly thicker for guests who prefer more temperature retention. Offer au jus and horseradish on the side.

Ham: Using the spiral cut as a guide, slice thin even pieces following the cut lines. If not pre-sliced, remove a stable end and slice across the grain into uniform pieces. Brush with reserved glaze during carving if desired for extra shine.

Maintain food safety: keep hot foods at or above 140°F (60°C) on the line. Replace small batches as needed and rotate platters to keep the station tidy. Use clean utensils for each protein to avoid cross-contamination.

Holding & replenishing

Refill chafing dishes and platters before they run low. Keep reserve warmers with whole proteins or sliced meat covered and at temperature. Check internal temps every 30–45 minutes. Reheat gravy or au jus gently and discard any sauce held at room temperature for more than 4 hours.
