Cold Brew Base

Combine coffee and water
Add 1 cup coarsely ground dark roast coffee to a clean 1-quart jar or pitcher. Pour 4 cups cold filtered water over the grounds, stirring gently to ensure all grounds are saturated.

Steep
Cover the jar and steep at room temperature or in the refrigerator for 12–16 hours. Longer steep time yields stronger concentrate.

Strain
After steeping, strain the coffee through a fine mesh sieve lined with a coffee filter, cheesecloth, or paper towel into a clean container to remove grounds. You should have roughly 3–3.5 cups of cold brew concentrate.

Make the flavor mix
While the cold brew is steeping or after straining, mix 2 tablespoons light brown sugar, 1 teaspoon vanilla extract, and 1 teaspoon ground cinnamon in a small bowl until uniform. This creates a simple beignet-style flavoring.

Sweeten the concentrate
Measure the cold brew concentrate. For each 1 cup concentrate, stir in 2 tablespoons of the beignet flavor mix (adjust to taste) and 1–2 tablespoons simple syrup if you prefer sweeter. Stir until sugar is dissolved. Chill the flavored concentrate thoroughly (ideally 1–2 hours) before nitro infusion.

Load and infuse with nitrogen
If using a nitro whip (N2) charger: Pour the chilled flavored cold brew into the nitro canister according to the device instructions (do not overfill). Charge with the recommended nitrogen cartridge(s). Shake the canister vigorously (per manufacturer directions) and allow to rest for 1–3 minutes. If using a nitro tap system, transfer the chilled flavored cold brew to the kegerator keg and infuse with nitrogen at 30–40 psi for 24–48 hours for stable microfoam. If using a small handheld nitro dispenser, follow its specific charging/rest instructions.

Serve
Chill a serving glass in the freezer or with ice (discard ice before pouring if you want a clean nitro head). Dispense the nitro cold brew slowly into the glass at an angle to create the cascading effect and creamy head. Top with a light pour of chilled milk or half-and-half (about 2–3 tablespoons) if desired. Dust with a pinch of powdered sugar and cinnamon to evoke beignet topping.

Storage
Keep any unused flavored cold brew refrigerated for up to 7 days. If stored charged in a nitro keg, it will hold head and texture for several days under nitrogen pressure; follow your equipment safety and food-safety guidelines.
