    Crack the 6 large eggs into a medium bowl. Add 3 tablespoons whole milk and 2 tablespoons heavy cream. Season with 1 teaspoon fine sea salt and 1 teaspoon freshly ground black pepper. Using a fork or whisk, beat vigorously until yolks and whites are fully combined and the mixture is slightly frothy (about 20–30 seconds). This aeration helps make the eggs creamy and tender.

    Set the bowl aside while you heat the pan so the eggs come to room temperature for a minute or two — this promotes even cooking.

    Heat pan and melt butter

    Place a nonstick or well-seasoned 8–10 inch skillet over medium-low heat. Add 2 tablespoons unsalted butter and (optional) 1 teaspoon olive oil. Melt the butter gently until it foams and just begins to subside but does not brown. The oil helps prevent the butter from burning if the pan gets slightly hotter.

    Add eggs and start stirring

    Pour the whisked eggs into the warm skillet. Let them sit undisturbed for 6–8 seconds so the edges begin to set. Using a silicone spatula, gently push the eggs from the edges toward the center, creating large soft folds. Continue to move the eggs every 8–10 seconds, scraping the bottom and sides so they cook evenly. Keep the heat on low to medium-low — low and slow produces creamy curds.

    When the eggs are mostly set but still slightly glossy and a little underdone (they will continue to cook off the heat), remove the skillet from the burner. Give one final gentle fold to combine any loose liquid. This should take about 2–4 minutes total cooking time depending on pan and heat. The texture should be soft and custardy, not dry.

    If desired, add a small pat (about 1/2 tablespoon) of additional butter and fold it in for extra silkiness. Sprinkle 1 tablespoon chopped fresh chives or parsley over the eggs and gently fold to distribute.
