Prepare the Dressing

In a blender, combine the anchovy fillets, fresh figs, lime juice, and olive oil. Blend until smooth. Season with salt and black pepper to taste.

Prepare the Romaine

Preheat your grill to medium-high heat. Cut the romaine lettuce heads in half lengthwise. Lightly brush the cut sides with olive oil and season with salt and pepper.

Grill the Romaine

Place the romaine halves cut-side down on the grill. Grill for about 2-3 minutes or until charred and slightly wilted. Remove from the grill and let cool slightly.

Assemble the Dish

Drizzle the fig and anchovy dressing over the grilled romaine. Top with pecorino cheese shavings and sprinkle with breadcrumbs.

Serve

Serve immediately while warm, garnished with additional lime wedges if desired.
