    Prepare the Beef

    Trim excess fat from the beef chuck roast and cut it into large chunks. Season with salt and pepper.

    Cook the Chiles

    In a dry skillet over medium heat, toast the guajillo and pasilla chiles until fragrant, about 2-3 minutes. Remove from heat and soak in hot water for 15 minutes.

    Make the Sauce

    In a blender, combine the soaked chiles, garlic cloves, cumin, oregano, and a bit of the soaking water. Blend until smooth.

    Cook the Beef

    In a large pot, add the beef chunks, bay leaf, and the blended sauce. Pour in the beef broth and bring to a boil. Reduce to a simmer, cover, and cook for about 2-3 hours, until the beef is tender.

    Shred the Beef

    Once cooked, remove the beef from the pot and shred it using two forks. Discard the bay leaf.

    Assemble the Tacos

    Heat the corn tortillas on a skillet. Place some shredded beef on each tortilla, top with Chihuahua cheese, diced onion, pickled jalapenos, and micro cilantro.

    Serve the tacos warm with a side of the broth for dipping.
