    Prepare the Sausage

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the cotechino sausage and cook until browned on all sides, about 8-10 minutes. Remove from skillet and set aside.

    Sauté the Vegetables

    In the same skillet, add another tablespoon of olive oil. Add minced garlic and cook until fragrant, about 1 minute. Then add the chopped bell peppers and sauté until they are softened, about 5-7 minutes.

    Combine Ingredients

    Add the sliced pepperoncini, salt, and black pepper to the skillet with the peppers. Stir to combine. Return the cotechino sausage to the skillet and mix everything together.

    Melt the Cheese

    Sprinkle the shredded mozzarella on top of the sausage and pepper mixture. Cover the skillet with a lid and let it cook on low heat for another 5 minutes, or until the cheese is melted and bubbly.

    Garnish and Serve

    Remove from heat and garnish with chopped fresh basil. Serve hot as a main dish.
