Prepare shaker and ingredients
If using egg white, separate one egg and measure 0.5 of the white (about half an egg white). Measure 2 oz Tullamore D.E.W., 0.75 oz fresh lemon juice, 0.5 oz simple syrup, and have 2 dashes of Angostura bitters ready.

Dry shake (if using egg white)
Add the whiskey, lemon juice, simple syrup, bitters and the egg white to the cocktail shaker without ice. Seal and shake vigorously for 15–20 seconds to emulsify and build a silky foam.

Wet shake
Add ice to the shaker (about 4–6 medium cubes). Seal and shake vigorously for 10–15 seconds until the shaker is cold to the touch and ingredients are well chilled.

Strain
Using the Hawthorne strainer and, if you used egg white, a fine strainer, double-strain the cocktail into a chilled coupe or rocks glass over fresh ice (or neat in a coupe if preferred). This removes small ice shards and any coagulated egg pieces for a smooth texture.

Express the oils of a lemon twist over the cocktail by holding the twist skin-side down above the drink and pinching to release oils. Rub the twist around the glass rim and drop it into the glass. Optionally, finish with a light dusting of grated nutmeg or a tiny pinch of cinnamon over the foam for aroma.
Serve

Serve immediately while cold. Sip and enjoy the balance of Irish whiskey warmth, bright citrus, and a touch of bitters. If served in a rocks glass, serve over one large ice cube to slow dilution.
