    Prepare glass

    Chill a coupe or rocks glass by placing it in the freezer for a few minutes or filling it with ice water while you prepare the cocktail.

    Dry shake (if using egg white)

    If using the egg white, add 2 oz Bushmills Irish Whiskey, 0.75 oz fresh lemon juice, 0.5 oz simple syrup, 2 dashes orange bitters, and 0.5 egg white to a cocktail shaker. Seal and shake vigorously without ice for about 15 seconds to emulsify and create foam.

    Wet shake

    Add about 1 cup of ice to the shaker (or remove the ice water from the chilled glass and add fresh ice to the shaker). Shake again vigorously for 10–15 seconds to chill and dilute the drink properly.

    Strain

    Double-strain the mixture (use a Hawthorne strainer and a fine mesh strainer if available) into the chilled coupe glass for a neat serving, or over 4 ice cubes in a rocks glass if you prefer it on the rocks.

    Garnish and serve

    Express a lemon twist over the drink to release oils, then rub the twist around the glass rim and drop it in as a garnish. Serve immediately.

    No-egg-white variation

    If you prefer not to use egg white, skip the dry shake step and combine the whiskey, lemon juice, simple syrup, and bitters with ice. Shake well and strain into the chilled glass.
