    Prepare glass

    Chill an old-fashioned or rocks glass by filling it with ice and setting aside while you mix the cocktail.

    Dry shake

    In a cocktail shaker, combine the whiskey, fresh lemon juice, simple syrup, and egg white. Do not add ice yet. Seal the shaker and shake vigorously for 15–20 seconds to emulsify the egg white and create a froth.

    Wet shake

    Open the shaker, add the 6 ice cubes, reseal, and shake hard for 10–12 seconds until the shaker is cold to the touch (this chills and dilutes the drink).

    Prepare serving glass

    Discard the ice used to chill the serving glass and add the 4 serving ice cubes (or one large ice cube).

    Double strain and finish

    Strain the cocktail through a fine mesh strainer into the prepared glass to remove ice shards and ensure a silky texture. Hold back the foam with the main strainer, then allow foam to settle on top of the drink.

    Bitters garnish

    Carefully add 2 dashes of Angostura bitters onto the foam. Use a toothpick or cocktail pick to gently swirl the bitters into a simple pattern if desired; this also helps aroma.

    Garnish

    Express the lemon peel over the drink (twist to release oils), run the peel around the glass rim, and drop the peel onto the foam or the side of the glass.

    Serve immediately. Sip, enjoying the contrast of bright lemon, smooth whiskey, and frothy egg-white texture.
