Cocktail

Method

Cocktail

  1. 1

Prepare honey syrup (if not ready)

Combine equal parts honey and very hot water (1 tbs honey + 1 tbs water recommended). Stir until fully combined and cool slightly.

  2. 2

    Dry shake

If using egg white: add bourbon, lemon juice, honey syrup, orange liqueur, bitters, and the egg white to a cocktail shaker without ice. Seal and dry-shake vigorously for 20 seconds to build a rich foam.

  3. 3

    Wet shake

Add a handful of ice to the shaker (about 1 cup). Shake hard for 12–15 seconds until the shaker is cold to the touch and well chilled, producing a silky texture and dilution.

  4. 4

    Strain

Double-strain the mixture into a chilled coupe or rocks glass (over fresh large ice if preferred) using a Hawthorne strainer and a fine mesh strainer to remove ice shards and any egg particulates.

Garnish & finish

  1. 5

Express the oils from a lemon twist over the surface of the cocktail by pinching the twist skin-side down near the drink, then rub the peel on the rim and drop it into the glass.

  2. 6

Optionally grate a small amount of fresh nutmeg over the foam or make a thin drizzle of honey across the top for extra sweetness and visual appeal. Serve immediately.
