Prepare & Build

    Chill glassware

    Place a large wine glass or highball in the freezer for 5–10 minutes, or fill the glass with ice and set aside to chill while you prepare the cocktail.

    Fill a cocktail shaker with ice (about 3/4 full). Add 2 oz Jameson, 2 oz fresh orange juice, 1 oz pineapple juice, 0.25 oz simple syrup (if using) and 0.25 oz fresh lime juice (if using).

    Shake vigorously for 10–12 seconds until well chilled and slightly frothy.

    Discard the chilling ice from the glass (if you used it to chill), then fill the glass about halfway with fresh ice.

    Double-strain the shaken mixture into the prepared glass over the fresh ice.

    Carefully top with 3 oz chilled Prosecco and 1 oz chilled soda water. Pour the Prosecco slowly down the side of the glass to preserve bubbles and create a layered spritz effect.

Finish & Serve

    Gently stir once with a bar spoon (1–2 turns) to integrate the sparkling components without flattening the bubbles.

    Garnish with an orange wheel on the rim and a pineapple wedge on the glass. Add a fresh mint sprig for aroma if desired.

    Serve immediately with a straw or cocktail pick for the garnish.
