    Prepare honey syrup

    If you don't have honey syrup already: combine equal parts honey and very hot water, stir until fully combined and cooled. Measure 0.5 oz for this recipe.

    Dry shake

    Add Irish whiskey, lemon juice, honey syrup, green Chartreuse, orange bitters, and egg white (if using) to a cocktail shaker without ice. Seal and dry shake vigorously for 15–20 seconds to emulsify the egg white and incorporate air for a silky foam.

    Wet shake

    Open the shaker, add ice (about 1 cup or enough to fill the shaker halfway), re-seal and shake vigorously for 12–15 seconds until the outside of the shaker is frosty and well-chilled.

    Double strain

    Double-strain the cocktail through a fine-mesh strainer (and a Hawthorne or julep strainer if available) into a chilled coupe or Nick & Nora glass to remove ice shards and any coagulated egg bits, ensuring a smooth texture.

    Finish and serve

    Express the oils of a lemon twist over the surface of the drink by holding the twist skin-side down and giving it a quick pinch near the glass. Run the twist around the rim and set it on the surface or hang on the glass. Gently slap the mint sprig between your palms to release aroma and place it as a garnish. Serve immediately.
