Make chocolate crumbs
Preheat oven to 300°F (150°C). On a rimmed baking sheet, combine cocoa powder, flour, granulated sugar, brown sugar, sea salt, and espresso powder. Dot with small pieces of cold unsalted butter. Using your fingers, a pastry cutter, or two forks, rub the butter into the dry ingredients until the mixture resembles coarse crumbs (pea to sand sized). Spread in an even layer.

Bake for 12–15 minutes, stirring once halfway through, until the crumbs are fragrant and slightly toasty. Watch carefully to prevent burning. Remove from oven and let cool completely on the sheet; the crumbs will crisp further as they cool.

If using whole dried bitterroot (or roasted dandelion/chicory), chop or pulse it briefly in a spice grinder to a coarse powder. Add the ground bitterroot to the toasted seeds and walnuts along with the ground chocolate cookies and mix until evenly distributed.

When the cocoa crumbs have cooled, fold them into the seed-and-nut mixture. Taste and adjust: add flaky sea salt if desired. Set aside in an airtight container until assembly.

Make the creamy filling
In a large bowl, beat the room-temperature cream cheese with powdered sugar and vanilla until smooth and lump-free (use a hand mixer or stand mixer on low). Add sour cream and continue to mix. In a separate chilled bowl, whip the heavy cream to soft peaks. Fold the whipped cream gently into the cream cheese mixture until fully incorporated. Add 3 dashes of bitters and fold to distribute. Taste and adjust sweetness or bitters as desired.

Assemble dessert: For a plated 'church' presentation (serves 6), spoon a base layer (about 2 tbsp) of the chocolate-seed 'soil' onto each plate and spread into a ~2–3 inch patch. Place a ring mold or small biscuit cutter (2–2.5 inch) on the soil and pipe or spoon 2–3 tbsp of the cream cheese filling into the mold to create a small mound. Gently remove the ring or cutter to leave a clean shape. Alternatively, pipe the filling onto a communal serving board in small domes.

Dust the exposed edges and top lightly with the optional tbsp of cocoa powder. Generously mound additional bitterroot soil around and over the base of each cream mound so it appears to be sitting in 'dirt.' Press lightly so some crumbs adhere to the sides.

Finish each portion with chocolate shards or drizzle melted chocolate over the top. Scatter a few microgreens or edible flowers and place berries around the plate to add color and a fresh counterpoint to the bitter soil flavors.

Chill assembled portions in the refrigerator for 20–30 minutes to let flavors meld and the filling set. Serve chilled or at cool room temperature. Store leftover soil and filling separately in airtight containers for up to 3 days; assembled plates best consumed within the day.
