    Prepare the Potatoes

    Peel the russet potatoes and cut them into thin strips (about 1/4 inch thick). Soak the potato strips in cold water for at least 30 minutes to remove excess starch.

    Fry the Potatoes

    Heat the vegetable oil in a deep fryer or a large pot to 350°F (175°C). Drain and pat the potato strips dry with paper towels. Fry the potatoes in batches until golden brown and crispy, about 4-5 minutes per batch. Remove and drain on paper towels.

    Season and Assemble

    While the fries are still hot, sprinkle them with sea salt and drizzle with white truffle oil. Toss to coat evenly. Transfer to a serving platter and shave pecorino cheese generously over the top before serving.

    Make House-Made Ketchup (optional)

    In a small bowl, mix together 1 cup of ketchup, 1 tsp of apple cider vinegar, 1 tsp of sugar, and a pinch of salt for a quick house-made ketchup. Serve alongside the fries.
