Prepare the Filling
In a mixing bowl, combine the chopped lobster meat, softened cream cheese, green onions, minced garlic, and lemon juice. Mix until well blended and set aside.
Assemble the Spring Rolls
Take a wonton wrapper and place a spoonful of the lobster filling in the center. Wet the edges with water, fold the wrapper over the filling to create a triangle, and press the edges to seal. Repeat with remaining wrappers and filling.
Fry the Spring Rolls
Heat oil in a deep frying pan over medium heat. Once hot, carefully add the spring rolls in batches, frying for about 2-3 minutes on each side until golden brown and crispy. Remove and drain on paper towels.
Serve
Serve the lobster 'Rangoon' spring rolls hot with your choice of dipping sauce, such as sweet chili or soy sauce.
