Prepare the Tater Tots
Preheat the oven to 425°F (220°C). Spread the tater tots on a baking sheet and drizzle with duck fat. Bake for 25-30 minutes or until golden and crispy. Drizzle with truffle oil before serving.

Prepare Duck Confit
If using store-bought duck confit, heat it in a skillet over medium heat until warmed through and crispy. If making from scratch, follow your preferred duck confit recipe.

Make Duck Gravy
In a saucepan, heat the duck fat and whisk in flour to create a roux. Gradually add duck stock, stirring until thickened. Season with salt and pepper to taste.

Assemble the Dish
On a serving plate, layer the crispy tater tots, followed by the duck confit. Sprinkle cheese curds over the top and drizzle with duck gravy. Carefully place a duck yolk on top of each serving.

Serve
Garnish with additional truffle oil if desired, and serve immediately while hot.
