Prepare the Coffee Rub
In a bowl, mix together the ground coffee, brown sugar, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper until well combined.

Season the Lamb
Pat the lamb pops dry with paper towels. Generously rub the coffee mixture all over the lamb pops, ensuring they are well coated. Let them marinate for at least 30 minutes at room temperature, or refrigerate for up to 4 hours for deeper flavor.

Cook the Lamb Pops
Preheat a grill or grill pan over medium-high heat. Once hot, place the lamb pops on the grill and cook for about 4-5 minutes on each side for medium-rare, or until they reach your desired doneness.

Remove the lamb pops from the grill and let them rest for 5 minutes before serving. This allows the juices to redistribute. Serve with your choice of sides.
