Directions
Prepare the oven
Preheat your oven to 200°C (400°F). Line a 9-inch springform pan with parchment paper.
Mix the cream cheese
In a large mixing bowl, beat the cream cheese until smooth and creamy, using an electric mixer on medium speed.
Add sugar and eggs
Gradually add the granulated sugar while continuing to beat. Add the eggs one at a time, mixing well after each addition.
Incorporate cream and flavoring
Add the heavy cream, vanilla extract, and a pinch of salt. Mix until fully combined.
Add flour
Sift the all-purpose flour into the batter and mix gently until just combined.
Bake the cheesecake
Pour the batter into the prepared springform pan. Bake in the preheated oven for about 35-40 minutes, or until the top is deeply caramelized and the center is still slightly wobbly.
Cool and serve
Remove from the oven and allow to cool at room temperature for at least 1 hour. Refrigerate for at least 4 hours before serving.
