Prepare the Pork Belly
Score the skin of the pork belly in a crosshatch pattern, being careful not to cut into the meat. Rub salt into the skin and let it sit for at least 1 hour to dry out.
Prepare the Star Anise Reduction
In a saucepan, combine water, star anise, and a pinch of salt. Bring to a simmer and let it reduce on low heat for about 15 minutes. Strain and set aside.
Heat the Oil
In a deep frying pan or pot, heat peanut oil to 180°C (350°F).
Fry the Pork Belly
Carefully place the pork belly in the hot oil, skin-side down. Fry for 10-15 minutes until the skin is crispy and puffed. Flip and cook the meat side for an additional 5-10 minutes.
Rest and Serve
Remove the pork belly from the oil and let it rest on a paper towel-lined plate for a few minutes. Slice and serve drizzled with the star anise reduction.
