Cannoli Shells Preparation

Make the Dough
In a mixing bowl, combine the all-purpose flour, granulated sugar, cocoa powder, and salt. Mix well.

Incorporate Wet Ingredients
Add the melted butter, egg, white wine or vinegar, and water to the dry ingredients. Mix until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth. Wrap in plastic wrap and refrigerate for 30 minutes.

Roll and Cut
After chilling, roll out the dough into thin sheets. Cut into circles (about 4 inches in diameter).

Fry the Shells
Wrap each circle around a cannoli form. Heat oil in a deep fryer to 375°F (190°C). Fry the wrapped shells until golden brown, about 2-3 minutes. Remove and drain on paper towels.

Whip the Cream
In a large bowl, whip the heavy cream until stiff peaks form.

Fold in Whipped Cream
Gently fold the whipped cream into the mascarpone mixture until well combined.

Coat the Cannoli Ends
Dip the ends of each cannoli shell into the melted chocolate, allowing excess to drip off. Place on parchment paper to set.

Fill the Cannoli
Once the chocolate has set, use a piping bag to fill each cannoli shell with the mascarpone filling.

Dust with cocoa powder and sprinkle with chocolate shavings to serve.
