Sausage Preparation

Cook the Sausage
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the spicy Italian sausage and cook until browned on all sides, about 8-10 minutes. Stir occasionally to ensure even cooking.

Prepare the Vegetables
In a large bowl, combine the cauliflower florets, julienned carrots, chopped green bell pepper, and chopped celery. Toss them together to mix.

Make the Pickling Brine
In a medium saucepan, combine the white vinegar, water, salt, and red pepper flakes. Bring the mixture to a boil over medium-high heat, stirring to dissolve the salt.

Combine and Cool
Pour the boiling brine over the mixed vegetables in the bowl. Let it sit at room temperature for about 30 minutes to cool slightly. Once cooled, stir in 1 tablespoon of olive oil.

Refrigerate
Transfer the giardiniera to a clean jar or container, seal it tightly, and refrigerate for at least 24 hours to allow the flavors to meld.
