Prepare the Tomatoes
Wash and quarter the Roma tomatoes, removing the seeds if desired.

Add Fresh Basil
Just before serving, tear the fresh basil leaves and gently fold them into the marinated tomatoes.
Crispy Prosciutto

Preheat the Oven
Preheat your oven to 400°F (200°C).

Bake the Prosciutto
Lay the prosciutto slices on a baking sheet lined with parchment paper. Bake in the preheated oven for 10-12 minutes or until crispy. Remove and let cool.
Balsamela (Balsamic Glaze)

Prepare the Glaze
In a small saucepan, combine balsamic vinegar and honey. Bring to a simmer over medium heat.

Reduce the Glaze
Reduce heat to low and let the mixture simmer until it thickens and coats the back of a spoon, about 15-20 minutes. Remove from heat and allow to cool slightly.
For Assembly

Layer the Ingredients
On a serving platter, arrange the arugula as a base. Top with marinated tomatoes, fresh mozzarella balls, and crispy prosciutto.

Drizzle with Balsamela
Drizzle the balsamela over the assembled dish to add sweetness and acidity.
