Cooking the Pasta

Boil Water
Fill a large pot with water and bring it to a boil over high heat.

Cook the Pasta
Add the penne pasta to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

Drain the Pasta
Once cooked, drain the pasta in a colander and set aside.
Preparing the Vegetables

Chop the Vegetables
While the pasta is cooking, chop the bell pepper, zucchini, and carrot into bite-sized pieces.

Halve the Cherry Tomatoes
Cut the cherry tomatoes in half and set aside.
Making the Sauce

Heat Olive Oil
In a large skillet, heat the olive oil over medium heat.

Add Spinach and Tomatoes
Stir in the spinach and halved cherry tomatoes, cooking for an additional 2-3 minutes until the spinach wilts.

Season the Sauce
Season with salt and black pepper to taste, mixing everything together.
Combining and Serving

Combine Pasta and Sauce
Add the drained pasta into the skillet with the vegetables and sauce, tossing to combine thoroughly.

Add Parmesan Cheese
Sprinkle the grated Parmesan cheese over the pasta and mix well until evenly coated.

Serve immediately, garnished with additional Parmesan cheese if desired.
