Cheesecake Crust

    Prepare the Crust

    Preheat the oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, granulated sugar, melted butter, and salt. Mix until well combined.

    Form the Crust

    Press the mixture firmly into the bottom of a 9-inch springform pan. Bake in the preheated oven for 10 minutes. Remove from oven and let cool.

Cheesecake Filling

    Prepare the Filling

    In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy. Add granulated sugar, sour cream, vanilla extract, and lemon juice. Mix until well blended.

    Add Eggs

    Add the eggs one at a time, beating on low speed after each addition until just blended. Do not overmix.

    Bake the Cheesecake

    Pour the filling over the cooled crust in the springform pan. Bake at 325°F (160°C) for 60-70 minutes or until the edges are set and the center is slightly jiggly. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.

    Cool and Chill

    Remove the cheesecake from the oven and refrigerate for at least 4 hours or overnight before serving.

Blueberry Compote

    Cook the Compote

    In a medium saucepan, combine blueberries, granulated sugar, lemon juice, and water. Cook over medium heat, stirring occasionally, until the mixture starts to bubble and the blueberries burst, about 10 minutes.

    Thicken the Compote

    Reduce heat to low and continue to simmer for another 5 minutes, or until slightly thickened. Remove from heat and let cool.

    Serve the blueberry compote over the chilled cheesecake before slicing.
