Method

For the Mozzarella Sticks

    Prepare the Cheese

    Cut the mozzarella cheese into sticks if not pre-cut, each about 4 inches long.

    Set Up Breading Station

    In three separate bowls, place flour in the first, beaten eggs in the second, and a mixture of breadcrumbs, grated Parmesan, chopped prosciutto, salt, and black pepper in the third.

    Bread the Cheese Sticks

    Dip each mozzarella stick first in the flour, shaking off excess, then in the beaten eggs, and finally into the breadcrumb mixture, pressing gently to adhere. Repeat until all sticks are coated.

    Chill the Sticks

    Place the breaded mozzarella sticks on a baking sheet and freeze for at least 30 minutes to firm up.

    Fry the Sticks

    In a deep skillet or fryer, heat vegetable oil to 350°F (175°C). Fry the mozzarella sticks in batches until golden brown, about 2-3 minutes. Remove with a slotted spoon and drain on paper towels.

For the Marinara Sauce

    Sauté Garlic

    In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

    Add Tomatoes and Seasonings

    Stir in crushed tomatoes, oregano, salt, and black pepper. Bring to a simmer and let cook for about 15 minutes.

    Finish with Basil

    Stir in chopped fresh basil just before serving.

For the Fig-Marsala Sauce

    Sauté Figs

    In a saucepan, melt butter over medium heat. Add chopped figs and cook for 2-3 minutes until softened.

    Add Wine and Broth

    Pour in Marsala wine and chicken broth, bringing the mixture to a simmer. Let it reduce for about 10 minutes.

    Season and Serve

    Add a pinch of salt to taste and mix well. Serve warm with mozzarella sticks.
