    Prepare the Potatoes

    Wash and scrub the Russet potatoes thoroughly. Slice them thinly (about 1/8 inch thick) using a mandoline slicer or a sharp knife.

    Soak the Potato Slices

    Place the sliced potatoes in a large bowl of cold water and soak for at least 30 minutes. This will help remove excess starch and make the chips crispier.

    Heat the Oil

    In a deep pot or a deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer for accuracy.

    Fry the Chips

    Carefully add the soaked potato slices to the hot oil in batches, ensuring they are not overcrowded. Fry for about 3-4 minutes or until golden brown and crisp.

    Drain and Season

    Using a slotted spoon, remove the fried chips from the oil and place them on a paper towel-lined plate to drain excess oil. While still hot, sprinkle with sea salt and paprika to taste.

    In a medium bowl, combine the sour cream, mayonnaise, onion powder, garlic powder, chopped green onions, salt, and black pepper.

    Stir the mixture until all ingredients are well combined and smooth. Adjust seasoning to taste.

    Chill the Dip

    Cover the dip with plastic wrap and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
