Beef Preparation

Searing the Beef
In a large skillet, heat a tablespoon of oil over medium-high heat. Season the chuck roast with salt, black pepper, garlic powder, onion powder, and Italian seasoning. Sear the beef on all sides until browned, about 3-4 minutes per side.

Braising the Beef
Transfer the seared chuck roast to a slow cooker. Pour the beef broth over the roast. Cover and cook on low for 8 hours or until the beef is tender and easily shreds.

Sautéing Peppers
While the beef is braising, slice the sweet bell peppers into strips. In a separate skillet, add a tablespoon of oil and sauté the peppers over medium heat until they are soft and slightly caramelized, about 10 minutes.

Preparing the Sandwich
Once the beef is done, remove it from the slow cooker and let it rest for a few minutes. Slice the beef thinly against the grain. Slice the baguette in half lengthwise and layer the sliced beef, sautéed peppers, giardiniera, and provolone cheese on the bottom half of the baguette.

Finishing Touch
Place the top half of the baguette on the sandwich. Optionally, you can place the sandwich under the broiler for a few minutes until the cheese melts. Serve with the reserved au jus from the slow cooker for dipping.
