Garlic Roasted Oil

Prepare the Garlic Oil
Preheat the oven to 300°F (150°C). Peel the garlic cloves and place them in a small baking dish. Pour the olive oil over the garlic cloves and sprinkle with salt. Cover with foil and roast in the oven for about 45 minutes, until the garlic is soft and lightly golden. Remove from the oven and let cool.

Prepare the Fries
While the garlic oil is cooling, wash and peel the russet potatoes. Cut them into thin wedges or strips. In a large bowl, toss the potato wedges with salt and black pepper. After the garlic oil has cooled, strain the oil, reserving the garlic cloves, and toss the potatoes with the garlic oil, making sure they are evenly coated.

Bake the Fries
Preheat the oven to 425°F (220°C). Spread the coated fries in a single layer on a baking sheet lined with parchment paper. Bake in the preheated oven for 25-30 minutes, flipping halfway through, until they are golden brown and crispy. Remove from the oven and immediately sprinkle with grated Parmesan cheese.

Fry the Parsley
In a small saucepan, heat the olive oil over medium heat. Once hot, add the fresh parsley and fry for about 30 seconds to 1 minute, until the parsley is crisp. Remove the fried parsley with a slotted spoon and drain on paper towels. Season lightly with salt.
Calabrian Chile Aioli

Make the Aioli
In a medium bowl, combine the mayonnaise, Calabrian chiles, lemon juice, and minced garlic clove. Mix well until smooth and creamy. Adjust seasoning to taste.
