Prepare the Marinara Sauce

Finish the Sauce
Add fresh basil leaves to the sauce, stir well, and remove from heat. Set aside.
Prepare the Vegetables

Slice the Vegetables
Cut the zucchini into thin rounds, slice the mushrooms, and trim the broccolini into smaller pieces.
Prepare the Seafood

Clean and Prepare
Rinse the calamari and shrimp under cold water. Pat dry with paper towels. Cut calamari into rings if not pre-sliced.
Prepare the Batter

Mix the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, salt, and black pepper. Gradually whisk in the cold sparkling water until the batter is smooth.
Fry the Ingredients

Heat the Oil
In a large pot or deep fryer, heat vegetable oil to 180°C (350°F).

Fry the Seafood and Vegetables
Dip the calamari, shrimp, zucchini, mushrooms, and broccolini into the batter, allowing excess to drip off. Carefully place them in the hot oil, frying in batches for about 3-4 minutes or until golden brown. Use a slotted spoon to remove and drain on paper towels.

Arrange the fried calamari, shrimp, and vegetables on a serving platter. Serve hot with the marinara sauce on the side.
