Preparing the Pistachio-Basil Pesto Aioli

Make the Pesto
In a food processor, combine the shelled pistachios, fresh basil leaves, minced garlic, mayonnaise, lemon juice, olive oil, salt, and black pepper. Blend until smooth and creamy. Taste and adjust seasoning as necessary.
Frying the Mortadella

Heat the Oil
In a deep skillet or frying pan, heat the vegetable oil over medium heat until it reaches around 180°C (350°F).

Prepare the Mortadella
Slice the mortadella into thick slices, about 1 cm each. Ensure each slice is uniform for even cooking.

Fry the Mortadella
Carefully place the mortadella slices into the hot oil, frying them for about 2-3 minutes on each side until they are golden brown and crispy. Remove and place on paper towels to drain excess oil.
Assembling the Sandwich

Assemble the Sandwich
Spread a generous amount of the pistachio-basil pesto aioli on the bottom half of each toasted brioche bun. Layer the crispy fried mortadella slices followed by a slice of provolone cheese. Top with the other half of the bun.
