    Boil the Eggs

    Place the eggs in a saucepan and cover them with cold water. Bring to a boil over medium-high heat. Once boiling, cover the saucepan, remove it from the heat, and let it sit for 12-14 minutes.

    Prepare the Pancetta

    While the eggs are cooking, dice the pancetta into small pieces. In a skillet over medium heat, cook the pancetta until it is crispy, about 5-7 minutes. Remove from heat and allow it to cool on a paper towel.

    Peel and Halve the Eggs

    Once the eggs are done cooking, transfer them to a bowl of ice water to cool for 5 minutes. Peel the eggs carefully and slice them in half lengthwise.

    Make the Filling

    In a mixing bowl, scoop out the yolks of the eggs and place them in the bowl. Add the mayonnaise, Dijon mustard, cooked pancetta, grated Parmesan cheese, black pepper, and salt. Mix until smooth and creamy.

    Fill the Egg Whites

    Using a spoon or a piping bag, fill each egg white half with the yolk mixture. Sprinkle with chopped chives for garnish.
