Melt Chocolate and Butter
In a medium heatproof bowl, combine the bittersweet chocolate and unsalted butter. Melt over a double boiler or in the microwave until smooth, stirring occasionally. Allow to cool slightly.

Mix Sugar and Eggs
In a separate bowl, whisk together the granulated sugar, large eggs, and large egg yolk until well combined and slightly frothy.

Combine Mixtures
Slowly pour the melted chocolate mixture into the egg mixture, whisking constantly until fully combined. Stir in the vanilla extract.

Add Dry Ingredients
Sift in the all-purpose flour and a pinch of salt into the chocolate mixture. Gently fold until just combined, being careful not to overmix.

Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.
Baking

Bake the Cakes
Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is soft.

Cool Slightly
Remove the cakes from the oven and let them cool for 1 minute. Carefully run a knife around the edges to loosen them.

Invert and Serve
Invert each ramekin onto a plate and gently lift off. Serve immediately with a scoop of vanilla ice cream on the side.
