Chicken Cutlet Preparation

Prepare the Chicken
Pound the chicken breasts to an even thickness of about 1 inch to ensure even cooking.

Bread the Chicken
Dredge each chicken breast in flour, shaking off excess, then dip in the beaten eggs, and finally coat with breadcrumbs, pressing gently to adhere.

Cook the Chicken
In a large skillet, heat olive oil over medium heat. Add the breaded chicken cutlets, cooking for about 4-5 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.

Cook Tomatoes
Add the crushed tomatoes, oregano, salt, and pepper to the saucepan. Simmer for 15-20 minutes, stirring occasionally.

Finish Sauce
Stir in the chopped basil just before serving. Adjust seasoning to taste.
Assembly

Layer the Ingredients
On the bottom half of each brioche bun, place a cooked chicken cutlet. Top with marinara sauce and then layer with mozzarella cheese.

Melt Cheese
Place the sandwiches under a broiler for 2-3 minutes until the cheese is melted and bubbly.

Garnish with fresh basil leaves and place the top half of the brioche bun on each sandwich. Serve immediately.
