Prepare the Lettuce

Wash and dry the baby romaine lettuce thoroughly. Tear the leaves into bite-sized pieces and place them in a large salad bowl.

Make Foccacia Croutons

Preheat your oven to 375°F (190°C). Cut the foccacia bread into small cubes. Spread the cubes on a baking sheet and drizzle with a little olive oil. Bake for about 10-12 minutes or until they are golden and crispy. Remove from oven and let cool.

Grate the Parmesan

Using a cheese grater, grate the parmesan cheese and set aside.

Dressing Preparation

Combine Ingredients for Dressing

In a small bowl, combine minced garlic, lemon juice, Dijon mustard, Worcestershire sauce, salt, and black pepper. Whisk together until well mixed.

Add Olive Oil

While whisking continuously, slowly drizzle in the olive oil to emulsify the dressing.

Combine Salad and Dressing

Pour the dressing over the prepared baby romaine lettuce and toss gently until the leaves are evenly coated.

Add Croutons and Parmesan

Add the foccacia croutons and grated parmesan cheese to the salad. Toss lightly again to combine.
