White Chocolate / Green Apple Sorbet Recipe

Sorbet Preparation

    Cook the Apples

    In a medium saucepan, combine chopped green apples, 1 cup of sugar, and 1 cup of water. Cook over medium heat until the apples are soft and mushy, about 15-20 minutes.

    Blend the Mixture

    Remove the saucepan from heat and let it cool slightly. Transfer the mixture to a blender, add lemon juice and fennel oil, and blend until smooth.

    Melt the White Chocolate

    In a microwave-safe bowl, melt the white chocolate in 30-second intervals, stirring in between until smooth. Allow it to cool slightly.

    Combine and Freeze

    Add the melted white chocolate to the blended apple mixture. Stir well to combine. Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions, or pour into a shallow container and freeze for 4-6 hours, stirring every hour to break up ice crystals.

Ritz Crumb Preparation

    Prepare the Ritz Crumb

    In a mixing bowl, combine crushed Ritz crackers, melted butter, and 2 tablespoons of sugar. Mix until the crumbs are well coated.

    Bake the Crumb

    Spread the mixture on a baking sheet and bake in a preheated oven at 350°F (175°C) for about 10-12 minutes, or until golden brown. Remove and let cool.
